What a threshold does to a signature
One cut-off, two outcomes
Every pixel is compared against the threshold you set. Darker becomes black, lighter becomes nothing. There is no in-between value left in the file, which is what some manufacturing processes require.
Where to put the cut-off
The default of 170 sits high on purpose. Ink is thinner than it looks, and a threshold in the middle of the range eats the faint ends of strokes. Raise it to keep more of the signature; lower it if paper texture is coming through as speckles.
Why processes demand two tones
Rubber stamp cutting, laser engraving and single-ink screen printing have no way to express a grey. They either cut or they do not. Handing them an image with soft edges means someone else decides where the boundary falls, and that decision is usually worse than yours.
The trade-off
Thresholding removes the anti-aliasing that makes a signature look natural on screen, so the result has visibly hard edges. That is correct for manufacturing and wrong for a PDF. Use Black Ink instead when the signature will be viewed rather than cut.
Cleaning a poor scan
A threshold is also the fastest way to rescue a grubby scan. Paper discolouration and scanner noise sit well above the cut-off and vanish entirely, leaving only the ink.
